Chalet Debonné is one of the premier boutique wineries in the U.S. and the second largest in Ohio. The family-owned and –operated facility has been producing award-winning wines since 1916. Debonné Vineyards makes one of the only naturally produced ice wines in the area, according to owner/winemaker Tony Debevc. The grapes for this extremely sweet, high-sugar-content after-dinner wine are traditionally picked at night on December 27 and December 28, he said, when temperatures average about 15 to 17 degrees. Chalet Debonné’s Harmony, a rose wine that is a blend of Merlot, Riesling and Chardonnay, is a favorite. “It changes in complexity, depending on whether it is served cold or at room temperature,” Debevc points out. He also recommends the Reserve Riesling, their most popular varietal, for its good acid structure, and the dry red Chambercin, with a very Beaujolais-like character.
